I travel to Vegas about 6 times per year to golf & gamble. I've stayed at all of the top rated hotels in town. The Bellagio is consistently the best.
The Golf courses that they are associated with is the best. If you are comped or pay the $500 greens fee, Shadow Creek is a wonderful high end golf experience. It edges out Harrah's Cascata and tops Wynn's golf course by a wide margin.
Bellagio's restaurants are another great reason to stay there. In my opinion, Prime is probably the best Steak house in the country and Jasmin is one of the top oriental restaurants.
The Salon Prive if my favorite place to play Blackjack. The atmosphere is very soothing and the staff is top notch.
